i been struggling for hours now trying to figure out how to connect my wallet to the network

says to find a remote node online but then i read thats not a good idea cause law enforcement could spy or control my wallet

can anyone give me some suggestions on what i should do or how i do it?

If you are using a remote node thru Tor you'll be fine, the risk is that the node could get your ip, but if you are using tor theres no stress, especially if you use a onion address node.
Just use like one of the top onion nodes from https://monero.fail/

You can only use a remote node on Tails to my knowlage, because it like cant start a deamon or whatever

not at all

If you are having troubles connecting it's probably because tails blocks non-tor connections, you just have to change the proxy configs to 127.0.0.1:9050
