I want to create a gmail or a protonmail without using my phone number. I don't want to use services such as 10min mail etc. Gmail and protonmail both require a phone # when I try to make an account, how would I go around this?
You can sign up for both Gmail and Proton both without a phone number.
If you're seeing that it is mandatory during the signup process, you're triggering their systems as higher risk. Don't sign up from Tor. Don't sign up from Linux or with a non-standard browser. Sign up from a clean residential or business IP on a standard system (Windows) with a standard browser (Chrome) and you'll be fine. There are ways to do this and still keep your opsec intact.
Proton will allow you to create without phone number. Use a burner email to verify your account creation so you can receive MFA codes and don't get your inbox restricted.
Just google temp email or something similar. Use a burner email from them. Verify. and then in your PM settings disable account recovery from that email.
Dependent on your threat model of course. But this should be enough to get you a working account.
Forget about gmail. In my experience, protonmail doesn't ask for a phone number unless you use their hidden service (why even provide it at that point?)
If it doesn't work, change circuit and try again.
You could also use a more privacy-respecting email service such as morke or onionmail if domain reputation isn't important. They also don't require javascript.
