I've been following https://torhoo.cc/go.php?u=TDNVdlptRjBhR1Z5WW1WaGNnPT0=# ' s The Complete Guide to Qubes & Whonix

I had a hell of a time getting the ISO onto my USB, but I did it.

I changed my BIOS settings, booted my USB and chose to install Qubes.

It now lists a lot of OK's with the last thing saying Finished systemd-baclkight...etc etc

I'm confused on my next step per the guide, maybe its the guide age?

What I think happens is that the installer is not starting, you should make sure that Secure Boot is disabled. If you check the official QubesOs documentation (qubes-os . org/doc/installation-guide/) there are pictures with every step.
