I suggest you have one burner phone per profile / account and use it far away from your premises. Don't be lazy, that burner will either upload your GPS coordinates and surrounding WiFi networks (as good as GPS coordinates) or you will be triangulated.
The main difference using a SIM-router versus a smart phone is that the SIM-router shuffles encrypted network packages (can still be triangulated) while a smart phone reveals lot more.
Yeah thats the problem with esims, I was thinking about using the SIM-router to connect to the Esim because I need WiFi in order to connect. Then put it in airplane mode then inside a faraday bag.

If you can get the eSIM working on an emulator you can use remote desktop. eSIM on emulator is relatively new and might be tricky to get working.

Secondly, the new and better emulators that potentially can support eSIM well, might not be open sourced, which will lead to sewer security, privacy and anonymity issues.
